Text field color options when creating a form

When creating a form in Acrobat X Pro (mac), how do you change the text colour using CMYK values instead of the eye drop tool in the spectrum? No where can I see the break down of CMYK or RBG values of any colours?  I also notice, non of my drop down menu is active under the image icon. Is there something wrong with my copy of the program?
